“Summer of Salad” Green and white Asparagus Salad
From first glance, you can probably tell that this salad is ranks pretty high up on the eating for health and nutrition scale. Its full of greens (bitter greens) healthy fats and of course great protein.
The one thing you can’t see is actually the most important ingredient.
Apple cider vinegar.
This stuff is, and I never speak this way, the BOMB! I drink ACV everyday (luckily for me I absolutely LOVE the flavour) and of course use it as a salad dressings, soups, marinades – the list goes on.

GREEN AND WHITE ASPARAGUS SALAD
Handful bitter greens – I used endive
1 bunch asparagus, stems trimmed
1/2 avacado
1-2 boled eggs
goats feta
salt/pepper
extra virgin olive oil
apple cider vinegar
Boil the eggs and steam or grill the asparagus spears.
Arange the greens on the plate. While warm, place cooked asparagus on greens and then add avocado and boiled eggs. Salt and pepper to taste and drizzle with olive oil and apple cider vinegar.
