Quinoa, sweet potato and pomegranate salad with a parmesan dressing

1 cup cooked quinoa

1 sweet potato – cubed and roasted

2 big handfuls of rocket

1/4 cup pomegranate beads

1/4 cup walnuts

 

Dressing

1/4 cup extra virgin olive oil

2 tbsp apple cider vinegar or lemon juice

1 tsp mustard seed

1/2 cup grated parmasan

Salt and pepper

Arrange the rocket, quinoa and sweet potato in a shallow bowl, serving dish. To make the dressing, place all the ingredients into a jar or small bowl and stir or shake to combine. Taste and adjust ingredients accordingly. Drizzle the dressing over the salad and top with pomegranate beads and walnuts.

 

Serves 2
